"The idyllic village of Slap in the Vipava Valley has been known for its viticulture for centuries. Janez Vajkard Valvasor wrote about the nobility of its drops in 1689 in the Slav of the Duchy of Carniola, where he says that 'the tears of the vineyard in Slap are even more delicious'. The first Slovenian agricultural school was founded in 1873 in this place, which is already mentioned in records dating back to the beginning of the 13th century, when Bishop Oton of Freising bought some farms. The Lanthieri counts gave the school premises in one of their manor houses.
Today, around 20 winemakers are involved in winemaking and cellaring, producing white, red and rosé wines, and more recently sparkling wines made from indigenous varieties of celery and pinot noir.
The wines of Slappen are elegant, harmonious and richly floral. Their drinkability and excellence are the result of an old tradition, which is now being built upon by younger generations with more modern production methods.
The taste of the waterfall wine is certainly influenced by the composition of the soil, which, with its mixture of limestone, lapis, sandstone and clay, gives the wines their mineral richness. And the unique natural weather conditions, which are the result of the Vipava Valley's location on the border between Mediterranean and continental climates.
